Beet Greens
Beet Greens are finally being given their proper respect.
For years people threw them out, but they make a wonderful side dish
and can be used in any recipe that calls for spinach. Yummy!
rule

• 1 bunch fresh, BEET GREENS
SEA SALT to taste
OLIVE OIL

Optional:
BUTTER, LEMON, PARMESAN CHEESE

• Cut the Greens & Stems off the BeetsBeet Greens
• CLEAN them well!
• Chop Greens & Stems
• Saute in Olive Oil (and/or Butter) until tender

Can be topped with Parmesan Cheese or Lemon
