Deviled Eggs

Deviled Eggs are probably the most requested food I get asked to prepare. An all American favorite. Use an egg per person and hopefully there will be some leftovers. When boiling the eggs, roll them from time to time so the yolks center themselves.Cilantro Pesto

• 1 dozen EGGS: boiled, shelled, and cut in half
• 1 tablespoon MUSTARD
• 4 teaspoon MAYONNAISE

• Remove yolks from whites and put into a bowl.
• Mix in the mustard and mayonnaise and blend.
• Add more of each as needed for taste and consistency.
• Replace mixture back inside of egg whites with a teaspoon and top with paprika.
• Cover and refrigerate until ready to serve.

I remove the shell from the egg by running it under cold water, be sure to grab the membrane.
