After carving most of the meat off the free-range TURKEY, throw the CARCASS into a soup pot. Cover with water and simmer on a low heat for a few hours to release all the flavors. Toss in whatever ORGANIC VEGETABLES you like along with ONION, GARLIC, BAY LEAF, CELERY SEED, and your favorite HERBS and SEAWEED. Simmer for another hour until all the vegetables are tender. SALT and PEPPER to taste.Cool and remove the bones. When ready to eat you can add rice, or orzo or just eat it as it is. |
