This soup is so warming on a cold day. A colorful dish to get through the grays of winter. I frequently put some leftover Spinach & Bean recipe into this soup.

In a soup pot put:
• 1 cup of dry YELLOW PEAS
• 4 cups of WATER Bring to a boil and lower the heat to a simmer. Add:
• 1 chopped CARROT
• 1 chopped ONION
• 1 chopped POTATO
• Season with BAYLEAF, SEA SALT & PEPPER (black or red), fresh PARSLEY.
• Use a Vegetable Bouillon or Bragg's Aminos if needed for more flavor.

Keep simmering until all is tender and a nice consistency has been achieved.
I puree it in the blender.
A dab of butter is aways delicious. A dash of shredded cheese devine. |
