Collard Green Pea Soup

This is my new favorite soup, just can't get enough of it. Eat it today, feel great tomorrow.

Pumpkin Pasta
Collard Greens• 2- 15 ounce can of BLACK EYED-PEAS
• 1 bunch of COLLARD GREENS chopped bite-sized
• 5 cups WATER
• 1 LEMON
GARLIC, minced, 2-3 cloves or to taste
• 1/2 cup fresh CILANTRO
• 2 tablespoon TOMATO PASTE
• 1 tablespoon OLIVE OIL
SEA SALT & PEPPER
• Saute garlic in olive oil for about one minute.
• Stir in tomato paste.
• Add collard greens and the liquid from the canned black-eyed peas, water, salt & pepper.
• Simmer on low heat for 10 minutes.
• Add roughly mashed black-eyed peas.
• Cook for about 15 minutes until collards are tender.
• Add the juice from the lemon and the cilantro.
• Simmer for another 15 minutes.
